Sous Vide Cooking

As a bit of a companion-piece to Claire’s post yesterday, I figured I’d add a little additional information about Sous Vide-ing.

When I first described Sous Vide cooking to my mother she immediately said, “Cooking in plastic bags?! That’ll give you cancer!” Now, my mom’s oncological background aside, the idea of cooking something in a plastic baggy is a little scary until you know more about it.

Champagne Cocktails

Last week I spent ~40 hours in airports and airplanes, so when I finally got home Saturday morning, it was time to celebrate.

While Claire was finishing up the veggies to go with our Baby Back Sous Vide I walked over to the Lil’ Cricket convenience store for a bottle of cheap champagne.

I knew we had a couple of mixers that’d go with it perfectly. Namely:

Ribs a la Sous Vide, of course

Recently, Jamey and I picked up a handy little steel bucket grill from Cost Plus World Market. We’ve only used it twice so far but for the same purpose: charrin’ some ribs.

Our trips to World Market are akin to our TJ Maxx and Marshall’s ventures: we usually go in for the purpose of one item and end up leaving with bagfuls of miscellaneous nonsense. However, this miscellaneous nonsense often results in spectacular items of discovery – items that bring us bottles of limoncello, and in this case, a handy red, portable grill that we can pop out right on our front porch and anywhere else. (Beach cook-out, anyone?) That Sweet Southern Storm

Every once in a while when I’m cruising around Charleston, I get a whiff of Georgia.

This is more palpable than the random pangs I have for home and family. In fact, I’ve been able to smell South Georgia’s forest fires all week here and smother in the blown-over haze. (Yesterday morning’s run didn’t even happen; I could hardly breathe the haze+humidity was so rough, so walk I did.)

So when my co-worker did a weather check yesterday afternoon, I was pleasantly surprised to hear that we might get slapped around with a little thunderstorm. It made the after-work journey home all the more interesting:

One thing I miss madly about Georgia is the frequent southern thunderstorm. There’s nothing like the oncoming breeze of a big one – when you’re standing out in the grass and catch a whiff of the rain, and a rumble follows. Driving, you see the bright flash in the distance, and you lean more toward the windshield to get a better glimpse and predict where the next one will hit.  Continue reading
